Research interests:
- Current research interest is in indigenous foods, landing our Africanism on the global platforms. I am curious so I satisfy my curiosity through recipe development, I use and encourage the use of indigenous products for recipe development. I am genuinely satisfied when someone enjoys what I have put on the plate especially if it was an experimental recipe.
- I have an interest in food packing. I have supported packaging waste reduction projects, cleaner labels projects and sodium reduction projects in my previous role.
- I am passionate about Food Safety hence my study titled Food hygiene, safety, handling practices and knowledge of food handlers in a food retail company in Durban, Kwazulu-Natal, South Africa (2018). Investigated the level of food safety knowledge amongst food handlers and if that knowledge translated to food safety behaviour. I am particularly interested in investigating knowledge producing a change of awareness and aligned behaviour including the factors that may hinder or promote that change.
