Biography:

Ms Nokuthula Shongwe is a lecturer in the field of Consumer Sciences at the University of Zululand at kwa-Dlangezwa campus. She holds a Msc Degree in Agriculture (Food Science). Her research interests are in Food and nutrition security in and in Food product and recipe development and other related fields She has a B.Sc Home Economics from the University of Swaziland obtained 2004, Hons Degree in Agriculture (Food Science) from the University of the Free State (2010) and in 2012 obtained a Msc Degree in Agriculture (Food Science) from the same University. Ms Shongwe   currently pursuing a PhD Degree in Food Security with the University of KwaZulu-Natal that focusing on a project entitled “Quality properties and consumer acceptability of Bambara groundnut (Vigna subterranean (L.) Verdc)- based foods for improved food security: A case study of primary school children in uMhlathuze, KZN.

Research interests: 

Ms Shongwe previous and current research are in the evaluation of the chemical composition of food product and recipe development, food security, she interested especially in the development of indigenous crops and development value addition on products to improve the nutritional value and testing the consumer acceptability on these products. Other interests are also in functional ingredients and their application in food products and other possible applications.
