Biography:

Dr Thembi Kheswa is a Senior lecturer in the Consumer Sciences at the University of Zululand at KwaDlangezwa campus. She holds a Masters in Community Nutrition. She has been offering a variety of courses from 1st year levels to 4th year undergraduate students. Culinary Studies; Introduction to Food Science, Nutrition Education; Food Marketing; Food Product Development, Work Integrated Learning. High school teacher, Lecturer at a College of Agriculture and lecturer at tertiary institution University of Zululand.

  • Food Marketing (Level 3)
  • Nutrition Education and Training (Level 3)
  • Food Product Development (Level 4)
  • Work Integrated Learning Consumer Sciences (WIL) (Level 4)

Qualifications:
BSc (Home Economics), Bachelor of Education & Diploma in Adult Education; Masters Community Nutrition, PhD Food Security.

Research interests: 

  • Current research interest in indigenous Food Research and Innovation opened an opportunity to earn a qualification in Food Security using an underutilized cowpea in the production of a cowpea fortified biscuit snack for enhanced food security.
  • Nutritional analysis, Quality Control and post -harvest processing of indigenous crops along the value chain.
  • Community based research where product developed in the laboratory are tested by target consumers in communities for acceptability and to encourage consumption as part of dietary diversification.
  • Consumer preferences, behaviour and perceptions towards indigenous underutilized legumes, cereal grains, goat meat in Northern KwaZulu Natal.
  • She is involved in a collaborative project South African Sweden University Forum (SASUF) on diversified local based women led economy and its contribution to livelihoods and food security.
  • She is part of a collaborative team UniZulu and UKZN on Amaranthus project funded by KZN Technology Transfer fund, where she specialized in Amaranthus food innovation and sensory evaluation and consumer acceptability of food products.
  • Research in Work Integrated Learning (WIL) methodologies in Consumer Sciences and is a team member in UNIZULU- Erasmus Sucsess project funded by European Union.
